So, I have to be honest with you, I don't really like the Xcode text editor. I also don't like things being done for me via automagic: behind the scenes sneakery. However, I read somewhere that you have to use Xcode in-order to publish to the iPhone and iTouch. Is this true?
What are the pros and cons for not using Xcode?

Yes, you need to use Xcode to build, deploy, configure, etc. However, you don't need to use its built-in text editor. In fact, Textmate comes with a plugin that will automatically build/run the Xcode project you're working on. Also, I believe you can set an external editor in Xcode so that it opens up Textmate whenever you click on a file in its views.
In other words, you can use Textmate to write code, but you'll need to keep Xcode open to do almost everything else.
