I'm just posting this for the benefit of anybody else out there still using Xcode 3.2.5 (I'll be upgrading as soon as Mountain Lion is released Rasp) who receives the error...

Xcode 3.2.5 Wrote:iPhone/iPod Touch: Icon.png: icon dimensions (0 x 0) don't meet the size requirement. The icon file must be 57x57 pixels, in .png format.

...when trying to validate or submit to the App Store; click on the icon, click File->Get Info, and change File Type from "image.png" to "image".

(Yeah, that took way too long to figure out Mad)
