Hi.

I was wondering if something similar would / can work on the iPhone?

The iPhone and iPod touch don't support the stencil buffer or hardware occlusion queries. The iPhone 3GS should support a stencil buffer as it's OpenGL ES 2.0, but I doubt it supports occlusion queries.
