You can start by downloading the developer tools from Apple. iPhone is still pretty inaccessible for beginners, but there are plenty of resources to learn programming on the Mac which will get you to iPhone when you are ready.

After you have the developer tools installed for Mac, you will need to learn C (I can recommend Learn C on the Mac). Then you will need to learn Objective-C and use that with Cocoa on the Mac (most popular book for learning Cocoa is Cocoa Programming for Mac OS X (3rd Edition) ). Then iPhone from there (no books available yet because of NDA -- pre-order only, AFAIK).

It's a long road, but it's fun. Good luck!
