How do I make a polygon show both faces? I have some polygons that are visible from two angles that the program thinks are "inside" and "out", but they are both really outside...

you want double sided polygons? or do you just want it to show both sides regardless of the way the normal actually is?

Probably double sided polygons. The object has so many vertices right now that I can't even tell if I'm selecting the correct one.
