making sprites - why am I so confused

I've use MS Paint and Gimp. I don't understand how to make the sprite's background transparent using either of these tools.
The sprites will be used with Cocos2D for iPhone.

Once you use Windows, you could try Paint.Net. It is free and works nice with transparent backgrounds.
